Here come the recipes.

This pizza is super easy. The most time-consuming part is making your own pizza sauce. If you make your own, you can expect more flavor, and you don’t have to make it as sweet as from a jar. If, however, you want to just throw something together, sauce from a jar works in a pinch.
The recipe link sends you to a traditional pizza. Obviously, I made a veg pizza, so remember that you can use the basics and change the toppings as you see fit.

Tiropita (Greek Feta Pie) – Easy Scrunched Filo Recipe
This rich dish looks incredibly fancy but is very easy and fun to make. If you want it less rich you can always add more mixed cheese and less feta.
The recipe is in metric.

Be careful with this recipe. It’s very more-ish.
I used less sugar, but I do like a little less sweet, and I love tart. Adjust to your own taste. Consider that when you use less sugar, you can add a dollop of vanilla ice cream, and the flavors balance well.
I used homemade frozen pie crusts which I thawed and shaped. It gave me a little more crust than I needed, as you can see.

Spring Tofu Noodle Soup with Fresh Herbs
So simple. So delicious. So satisfying. Remember, you can add more vegetables to make it a little more hardy.
The website where you will find this recipe has several on one page. Just scroll until you find the title.

Bok Choy and Mushroom Stir Fry
Making this recipe is a breeze, and it’s so delicious it will have you coming back for more.
I made a few changes for my version: 1. Exchanged Worcester sauce for the oyster sauce. 2. Used regular white onions for green as they cost less. 3. Added tofu for protein and 4. Added some shredded carrot and chopped bell pepper for a splash of color.
