
Ingredients
Single layer pie crust
2 Tbsp olive oil
3 C. thinly sliced or shredded zucchini
1 C. chopped onion
4 oz. sliced mushrooms
1/2 C. parmesan cheese
1 Tbsp Italian seasoning
4 eggs
2 tsp Dijon mustard
1 C. shredded monzzarella
Coat a 9-in deep dish pie plate with oil. Place crust in bottom and sides. In skillet, sauté zucchini, onions, and mushrooms for about 5 minute. Combine all ingredients; mix well. Pour into crust and bake in 375 degree oven for about 20-25 minutes.
